Oh, wow! See, I thought it very strange that neither of my grandsons will eat chicken. That used to be all kids favorite meal - fried chicken!! We loved that when I was a kid and my kids loved fried chicken, too! So when I thought a great meal to serve when the grandkids came over would be homemade fried chicken, mashed potatoes and gravy. But, my Daughter let me know that they won't eat it. They don't like chicken and they don't like potatoes. They will eat chicken nuggets and French fries from McDonalds, though ... what? Are you kidding me? :doh: :uhuh:

It's a texture thing, mostly, I think. Judi's other kids prefer chicken nuggets, also, but they'll eat it either way. With Ethan, he used to eat it either way, but since we got the chickens and the kids (and their parents) have taken to naming them all...sigh...he has changed his mind. :lol:

Personally, I'll eat chicken no matter how you cook it...it's one of my favorite foods! :uhhuh:

If it's any consolation Melody, I'd love to come around for fried chicken, mashed potatoes and gravy anytime! :uhhuh: :evillaugh: Funnily enough though, even Alex who is almost 26 won't eat mashed potatoes!

:evillaugh: I've made myself hungry for some Popeye's, or Raising Cain's chicken! I like chicken roasted, bbq'd and chicken salad sandwiches as well! One of my favorite meals was my Grandmother's Chicken and homemade (from scratch) noodles!! :yeah:

:rotfl: I had chicken schnitzel yesterday, with potato wedges, I made a low fat sriracha and lemon mayonnaise to go with, yum, could eat it all over again :evillaugh:

After I read your post early this morning, Lisa, I went looking for a recipe for Judi. I don't recall that she's ever made it before, and it's been years since I've had any. I think it could become a new favorite for her!

It's a favorite of mine too! It must be better than the fried chicken you get at places like KFC because there's no skin on, so you can control how much fat goes into the frying of them, although, adding plenty gets the best results :doh: :evillaugh:

I slice 3 or 4 chicken breasts into half, to make them thin, soak in 2 eggs with a little paprika, rosemary and garlic, for an hour or so, dip into breadcrumbs and fry in half butter half oil, adding a little more for the 2nd side.

I made the mayo by mixing plain low fat hellmans mayo with a little sriracha and lemon juice to taste. :joy:

Potato wedges, just potatoes in their skins baked with very little oil to stop from sticking, yum!
