Pan-Seared Fish

Pan-Seared Fish

The recipe, I've tweaked and calls for Cod, but I used Tilapia. It also called for multi-grain rice, I used white rice. This makes a full meal for two in only 6 minutes (maybe 10, depending on how long it takes you to get everything ready).

Ingredients:
Minute Rice (your choice)
2 large fish fillets (Cod or Tilapia - probably just about any fish of your choice would work)
Olive Oil (just enough to almost coat the bottom of the pan)
3 Tablespoons oleo or butter
1/4 teaspoon minced thyme
1/4 teaspoon minced garlic salt
1 Tablespoon of soy sauce
1 Tablespoon or juice of 1/2 lemon
Frozen Sweet Peas in microwavable steamer bag

place olive oil and butter, thyme, garlic salt, soy sauce and lemon juice in frying pan. Heat until ready. Place fillets in pan. Cook 3 minutes each side.

while the oil heats, put 1 cup water in pot and bring it to a boil. Once the fillets start to cook, place 1 Cup minute rice in boiling water, cover, remove from heat and leave it stand for 5 minutes.

After the rice has been covered, place the peas in their steamer bag in microwave and cook for 4 minutes. (Don't forget to turn the fish over to cook the other side for 3 minutes.)

Take the peas out of the microwave when done, place in bowl, add two pats of butter. Uncover the rice and salt to taste, plus add a couple of pats of butter to it as well. Serve up the fish - one fillet per plate, reserving some of the cooking sauce to sprinkle individually over the fish, rice and peas as desired.

Not only any fish, but I'll bet chicken would be just as good! I'll definitely be trying this meal recipe, Melody. Thanks! :uhhuh:

You are so right! I will be trying out a chicken picata recipe today which uses some of these ingredients, plus a few others. I'll be serving it with angel hair pasta. If it turns out, I'll post the recipe. :uhhuh:
