Creamy Burrito Casserole

Creamy Burrito Casserole

Ingredients
1 lb ground beef
1/2 onion, chopped
1 package taco seasoning
6 large flour tortillas
1 can refried beans
2 -3 cups shredded taco cheese or cheddar cheese
1 can cream of mushroom soup
4 ounces sour cream

Directions
Brown beef and onion; drain.
Add taco seasoning and stir in refried beans.
Mix soup and sour cream in a separate bowl.
Spread 1/2 sour cream mixture in the bottom of a casserole dish.
Tear up 3 tortillas and spread over sour cream mixture.
Put 1/2 the meat bean mixture over that.
Add a layer of cheese.
Repeat the layers.
Sprinkle cheese over the top and bake, uncovered, at 350°F for 20-30 minutes.




I'm going to figure out how many calories this has, for one serving, and maybe try it!

EDIT: Here's how the figures came out in a My Fitness Pal recipe. I figured the baking pan I used to be 8 servings. For today, I can have two servings, which equals:

Calories--1038
Carbs--76
Fat--41
Sodium--2675 (oops)
Sugar--6
Protein--45

Obviously, the sodium is way too much, but for today...too bad. I'm going to enjoy my meal! :joy:

Are you sure the calorie count is correct on that. I'm looking at each of the individual ingredients and they are all super high calorie foods.

Yup...got the calorie count right off all the packages, except for the hamburger. That, I got from several different databases, to confirm, and I took the highest one I found (very little different from the others, but up by about 30 calories overall, for the entire package).

1038 calories for a single dish in a single meal is a LOT of calories, but it also contains some good nutrients, and that's good. Most of my recipes come in about half that many calories for a single dish meal, so this was really splurging for me, but still kept me under my daily usage, except for the sodium.

That looks absolutely delicious! I often have large calorie meals, they fill you up, make you satisfied and you don't always think about eating later if you've really enjoyed a nice good meal :joy:

I only eat one meal a day. I log in for TODAY, rather than three meals and snacks. It's just much easier that way, and with the hours I keep, a lot more practical. I get all my food ready at once, and bring it here. I may not eat it all at once, actually, since most days there is a piece of fruit or some canned fruit, plus my instant coffee with milk and Truvia. Sometimes I still have a few calories left over for a biteor two of whatever meal David and Jonny have in the late evening. Then I just add those calories in at the end of the day. :uhhuh:

I'm down 12.8# now, and am a happy camper!!!
