Mexican Lasagna

I never have liked the ricotta cheese that is found in most lasagna so I set out to create one I would eat. I came up with two recipes, one for regular lasagna and another for mexican lasagna.

Both recipes use three ingredients, cook for 60 minutes at 350.

Cover bottom of the pan with the sauce, then alternate layers of the noodles/tortillas and cheese, ending with cheese on top. Cover and bake. Let sit for 15 minutes afterwards uncovered then eat.

Lasagna noodles
Red sauce
Shredded mozzarella cheese

Mexican Lasagna
Corn tortillas
Shredded Mexican 4-cheese

They both sound absolutely lovely, and a lot less expensive than using the ricotta cheese, too! :uhhuh: Thanks, Teresa!
