Banana Cookies

Banana Cookies

1/2 cup unsalted butter, room temperature
1 cup sugar
1 egg, room temperature
1 cup mashed banana (about 2 1/2 large bananas)
1 teaspoon baking soda
2 cups flour
1 pinch salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 cup chopped nuts (pick your favorite or even add chocolate chips) (Optional)

Directions:

1 Preheat the oven to 350°F Cream the butter and sugar together until light and fluffy. Add the egg and continue to beat until the mixture is light and fluffy.

2 In a bowl, mix the mashed bananas and baking soda. Let sit for 2 minutes. The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.

3 Mix the banana mixture into the butter mixture. Mix together the flour, salt, and spices and sift into the butter and banana mixture and mix until just combined.

4 Fold into the batter the pecans or chocolate chips if using. Drop in dollops onto parchment paper-lined baking sheet. Bake for 11-13 minutes or until nicely golden brown. Let cool on wire racks.

5 Makes about 30 cookies.

This is exactly the way I make persimmon cookies. To make them, you'd just substitute the same amount of mashed persimmon pulp, instead of the banana pulp. You could also substitute applesauce or other pureed fruit (pears, peaches, plums...even blackberries, which I have done before!). To change it up a bit, sometimes I substitute oatmeal for 1/4 of the flour.

Another thing I do, quite often, in cookies, is to change out half of the butter/shortening with cream cheese. Yum!

Oh, I bet the cream cheese cookies are superb! I love cream cheese!! Cream cheese combined with the blackberries ... I may just have to try that!! It would be nice dessert for this weekend. I'll have to see if I can find some seedless blackberries at the store this week. :joy:

Seedless would be best. I just used regular, fresh-picked ones, when we lived in Washington...we had them right out at the side of our house, and they were SO yummy...even with the seeds! ;-)

Just be prepared for people to make comments on how the cookies look, if you use blackberries...everything turns a kind of funny color because the native color of the cookies is golden...mixed with purple...hmmm. Then when people taste them, they don't care. :rotfl:

:evillaugh: They will think an odd color fun!! The adults, maybe, not so much and then where the grandsons will eat just about anything called "Cookie" - the adults .... not so much. :evillaugh: :rotfl:

Agreed! The first time I made them, even David went, "Whoa! What are THOSE?!" and he LOVES blackberries! As soon as I told him what was in them, he grabbed one, and now they're his favorites, but that first time was extremely funny. :lol:

Oh dear, it just so happens I have 3 bananas that need using, they are on their last legs today, but luckily I go to my grandmas tomorrow and taking my auntie Alice, so I can easily get rid of them all :evillaugh:

Oh my goodness, Jason just stole 3 from the first batch, he's very difficult to please cooking wise, I took a small bite of his and it's just amazing! The mixture made 20 this size, which I am not now sure will make it to my grandmas once Alex gets home :rotfl:

Thank you! Luckily I was in a totally baking mood, I made apple muffins for Alex, so I still have plenty for my grandma and an apple loaf cake to boot!
