Mexican Shrimp Cocktail

Mexican Shrimp Cocktail

This looks to be a good treat for those of us watching our weight, and delicious, to boot!

1-2 lb. shelled & cooked shrimp (50-60 count)
2-3 large tomatoes, chopped
1 medium onion (your choice of type), chopped
1 c. cilantro, slightly chopped
1 fresh jalapeno, diced (with seeds) (or used pickled diced or sliced jalapenos to taste)
1 avocado, chopped
V8 juice with salt & pepper to taste (use more or less juice, depending the cocktail consistency you prefer)

Mix all in glass bowl & chill; serve w/crackers.

I have problems with cilantro, though I love it. I'd probably substitute parsley, add a little more jalapeno, or just leave out the cilantro entirely.

It does look good! I can't handle the jalapeno and only just a wee, wee bit of the cilantro because it brings heat as well! Spicy heat tears me up big time. :uhhuh:

I have a very similar recipe in my Mexican recipe book by Thomasina Miers, she owns a chain of Mexican restaurants in London called Wahaca, yummy!

I think the recipe would be good with neither the cilantro nor the jalapeno, Melody. Do you like avocados?

Lisa--that recipe looks scrumptious, too! I love scallops!!!

I love avocados!! I think you are right - it would be great even without the heat added! :uhhuh: :friends:

I've been wondering about the cucumbers. I love cukes, but I'm not sure I'd like them in this combination.

I love avocado too! I absolutely love a traditional prawn and seafood dressing on avocado, of course that is a non diet food though, but heavenly :doh: :rotfl:
